The sauerkraut juice is so called because it is a blend of many cruciferous vegetables, among which Brussels sprouts, cauliflowers are and a high concentration of cabbage. This is an ancient technique of fermentation, preserving cabbage and one of the world’s oldest remedies for varieties of health conditions.
Traced as far back as the fourth century B.C, the ancient Chinese made the most use of this health solution. In fact, it is believed that the Chinese mixed shredded cabbage leaves with rice wine, and 100 years later, this recipe was introduced into Europe by Genghis Kahn. The Germans approach to this juicing is quite different, they salted the shredded cabbage, and left them in barrels filled with water.
Then they wait for the fermentation process to finish, after which they draw the water out of the barrels, and thus we now have the sauerkraut juice. The present day method is goes through a similar process. However, people prefer to change water from the barrels multiple times during the fermentation process, and use the last batch as juice (Balkan method).
One notable professor who has spent all of his years doing research on the health benefits of sauerkraut juice is prof. Karadzov form Republic of Bulgaria. He was earlier diagnosed with colon cancer, and after surgery, he stubbornly rejected having chemotherapy. Despite his doctors his doctors attempt to have him change his mind, he just was too determined to create his own natural remedy. And so, fully armed with the knowledge of the health benefits of sauerkraut juice and its immunomodulatory benefits, he used his knowledge and experience from the field of microbiology to make a cure.
Prof Kara knew that he can be cured through the use of bacillus from the Sauer cabbage, and describes the process thoroughly, when preparing the sauer cabbage, he waits for the juice to become cloudy because this is the period when the lactobacillus are multiplying. His cure (sauerkraut juice) has proven to work because for more than 20 years, he has been active, healthy, feeling good and extremely experiencing life, despite his scientist colleague’s scepticism because of the high concentration of salt in the sauerkraut juice. Prof. Karadzov found a solution to this problem too; rather than add 30 grams of salt per one liter of water, he adds 8 grams of salt, and also adds honey in the barrel, because he was fortunate enough to discover that lactobacilli multiply even better at the end of the fermentation process because of the sugars in honey.
Prof. Karadzov also puts in red beet to give the sauerkraut juice a pink color (a pleasant color), and aids in the fight against every cancerous cells in addition with the sauerkraut.
Health Benefits and Uses of Sauerkraut Juice
Obviously, fermentation refers to the metabolic process of converting carbohydrates in carbon dioxide and alcohol. For the process to take part, you’ll need carbohydrate, bacteria or yeast, which will convert the sugar into healthy bacteria which helps regulate intestinal functions. However, if the bacteria are deprived of oxygen a phenomenon called microbial fermentation happens, fermentation that makes food so called probiotic, or also described as “lactic acid fermentation”.
The sauerkraut juice packed with probiotics, and thus the benefits of its consumption is huge, especially in reducing the risk of various diseases associated with microbial imbalance, on the digestive tract and keeping the right microbial balance.
Benefits and uses of sauerkraut juice
In 2009, The Indian Journal of Medical Microbiology (2009) published an article on the use of antibiotics. It states that “the use of antibiotics, immunosuppressive therapy and irradiation, amongst other means of treatment, may cause alterations in the gut composition and have an effect on the GIT flora. Therefore, the introduction of beneficial bacterial species to the GI tract may be a very attractive option to re-establish the microbial equilibrium and prevent disease.”
There is numerous health benefits of consuming sauerkraut juice are many but most are related to the benefits of consuming probiotics. They help:
- Eliminate food allergies and reduce sensitivities
- Lower the risks of brain disorders and the chances of facing mental illness
- Reduces the risk of possible digestive disorders such as leaky gut syndrome, ulcerative colitis etc.
- Strengthen your body against mood disorders (depression and anxiety)
- Fight against weight gain or obesity
- Aids in the treatment of symptoms of asthma
- Eradicate metabolic conditions such as diabetes
- Battle different types of autoimmune diseases
But wait… there are more! These are related to the presence of “good bacteria” in the gut, which is very beneficial to the overall health of your kidney function, hormonal levels, your brain, heart condition and all other digestive organs. Recently, there has been research that proves to us further reveals more probiotic properties of sauerkraut juice:
- It aids easy digestion
- It helps detoxifies the body system, thus throwing in a hand in the prevention of infection
- It helps the brain function and cognitive health (associated with the prevention of Alzheimer’s disease and dementia)
- Improves and strengthens the immune system
Sauerkraut juice – cancer fighting probiotic
Further studies have revealed that apart from the previously discussed chemical compounds, there are many other compounds that offer protection against cancer, compounds like sulphoraphane, Lactobacillus and izothiocyanate. The lactobacillus can prohibits the formation of tumors, and may offer many other anti-cancer benefits. The remaining two compounds, sulphoraphane and izothiocyanate may inhibit the formation of cancerous tumors preventing any development of certain cancer cells.
When the body digests sauerkraut, there is production of Diindolylmethane (DIM) is produced in our stomach, and this compound, as revealed in a research conducted by the journal BMC Gastroenterology in May 2009, may be responsible for anti-cancer effects in vitro and in vivo models.
There are countless studies that have proved that the number of tumors has greatly decreased in DSS/AOM mice (mice treated with genotoxic agents). There are no disagreements that DIM are a remarkable anti-inflammatory and anti-cancer, and the sauerkraut juice is an awesome source in the production of this substance.
